BIOLIGICAL EXTRA VIRGIN OIL

The Santa Barbara olive grove is located 500 meters above sea level, in the municipality of Geraci Siculo, adjacent to the Madonie Natural Park (UNESCO Geopark, with peaks that reach over 2000 meters), in the north-central area of ​​Sicily, in the province of Palermo. The Santa Barbara olive grove has a unique microclimate, resulting from its natural geographic exposure to the South-East; its natural slope avoids the problems of water stagnation, to which the olive tree is very sensitive. The soil is characterized by a clayey soil, rich in minerals and the climate is typical of the Alte Madonie mountains: strong northern winds and snowfalls in winter, with significant temperature variations between day and night in summer.

The distinctive element of our olive grove is the variety of organically grown olives set within the pristine landscape of the Alte Madonie. Fifty years ago our plants were characterized only by centuries-old olive trees, today we grow four different types of cultivars: Biancolilla, Crastu, Frantoio and Santagatese. The modern olive grove is cultivated with organic farming methods with the aim of obtaining a premium quality extra virgin olive oil without the use of chemicals and pesticides.

Crastu

Light green oil with golden hues. On the nose, green herbaceous perceptions of thistle and artichoke are highlighted, accompanied by light hints of toasted coffee. On the palate, in the aftertaste, the olfactory perceptions are confirmed accompanied by the perceptions of wild chicory and black pepper.

The altitude enhances the Crastu olive variety which at 500 m.s.l. generates a very fragrant and intense bitter-sweet oil which results in a distinct and balanced combination. Ideally used with strong dishes, roasted meat or raw vegetables.

Frantoio

Tasting notes Green extra virgin organic olive oil with golden hues.
On the nose, green herbaceous perceptions of wild chicory, thistle and artichoke. Upon tasting, the olfactory perceptions are confirmed: after a first sweet sensation it gives way to a bitter and a spicy taste in harmonious balance.

The altitude enhances the Frantoio olive variety which at 500 m.s.l. generates a fruity oil, excellent on mixed grilled meats, legume soups, bruschetta and on all dishes that enhance the distinctive taste of Mediterranean cuisine.

Santagatese

Tasting notes Organic extra virgin olive oil with a light green colour and golden-yellow hues. On the nose, green herbaceous perceptions of thistle and artichoke are highlighted, accompanied by light hints of green tomato. The taste is slightly spicy and with a general sensation of bitterness counterbalanced by a certain sweetness.

The Santagatese variety is very suitable for those looking for a fruity oil of medium intensity and very high quality, with a refined flavour, to be combined with not too elaborate dishes of either fish, meat or vegetables. It is also highly appreciated for dressing raw foods, salads and light legumes.

Biancolilla

Tasting notes Light green extra virgin organic oil with yellow hues. On the nose, green herbaceous perceptions of bitter almonds, thistle and artichoke. On the palate, in the aftertaste, the olfactory perceptions are confirmed accompanied by the perceptions of wild chicory and wild rocket.

The altitude enhances the Biancolilla olive variety which at 500 m.s.l. generates a very fragrant oil in which the bitterness and spicy taste results in a distinct and balanced combination. Ideally used with light dishes, like fish, white meat or crudités.

Family Reserve

Our Family Reserve blend is expertly made by mixing our cultivars (Biancolilla, Crastu and Frantoio), to determine an organic extra virgin olive oil with a balanced flavor and excellent quality. The blend is the result of our desire to always offer customers new and exciting products!
